Increases in the contents of both total and free-form biotins were found in mature milk compared with colostrum. The ratio of free-form biotin to total biotin was approximately 0.81 in colostrum, and it did not change throughout lactation period studied. The activity of biotinidase in bovine milk increased during lactation as the free-form and total biotin contents gradually increased. These observations might suggest that biotinidase plays a role in keeping the ratio of free-form biotin to total biotin constant in bovine milk."},{"@value":"牛乳中のビオチンの存在形態と,その経時的変化を明らかにするために,ホルスタイン5頭から3カ月間牛乳を採取し,Lactobacillus plantarum ATCC8014を用いた新しいディスクプレート法により,その総ビオチン量と遊離型ビオチン量を測定した.<br>牛乳の総ビオチン含有量は,出産後の日数の経過とともに有意に増加(p<0.01, r=0.718),遊離型ビオチン量も同様に有意に増加した(p<0.01, r=0,744).総ビオチン量に占める遊離型ビオチン量の割合は,日数の経過にかかわらず,泌乳期間を通して約81%と一定であった.<br>また牛乳のビオチニダーゼ活性は,初乳に比べ移行乳(p<0.05),成乳(p<0.01)と有意に上昇し,更に総どオチン量(p<0.Ol, r=0.428),遊離型ビオチン量(p<0.01,
