Description
The contents of vitamin D2 and ergosterol in fungi cultured in room without solar radiation were determined by two steps chromatographic method previously established. Vitamin D2 produced from ergosterol in fungi by solar or ultraviolet light irradiation was investigated. And then the contents of vitamin D2 produced in Shiitake, Hiratake and Enokitake by solar or ultraviolet light irradiation under the various conditions were discussed.<BR>In all fungi in present investigation, the ergosterol was present in considerable amount, but no or little vitamin D2 was present in the Hiratake and Enokitake. Vitamin D2 in all the sample of fungi was produced from ergosterol by ultraviolet light irradiation, but also by solar radiation. More vitamin D2 in fungi, especially in Enokitake, was produced in ultraviolet light irradiation than in solar radiation.<BR>The result of the observation above mentioned showed that, in view of the nutrition, exposure to direct sun light for several hours makes those fungi into an effective source of vitamin D supply.
