<p>Polysaccharide-based optically anisotropic materials are presented in terms of scaling from the molecular scale to the molecular aggregate scale. Gels exhibiting optical anisotropy were obtained by adding ion exchange resins to polysaccharide solutions. Furthermore, gels showing similar optical anisotropy were formed in different solvents and with different deionization methods (application of DC voltage). Gels were also formed when the molecular aggregates (nanofibrils) were used as elements. These phenomena had in common the importance of the flow dynamics and the associated orientation of these elements. Although molecular chirality itself is not the direct cause of the optical anisotropy of the gels, in terms of symmetry breaking, such optically anisotropic gels are desirable materials for chirality-based functionalization.</p>
