Research Abstract

本研究は、未記録のまま消滅してしまう危機に直面しているカンボジアの伝統食品を、フィールド調査により発掘・記録し、衰退の要因解明、食品成分や効能の解明、そして消費活性化や新たな消費創出に向けた社会実践を通じて、維持・継承するための効果的かつ実現性の高い方策の提言を目指す。
