褐斑病菌(Cercospora beticola)に対するてん菜種子中の抗菌性物質について研究した。抗菌活性を示す画分から4種のフェノールアルデヒドと4種のフェノールカルポン酸を単離した。フェノールアルデヒド,特にp-ヒドロキシベンズアルデヒドは,チオファネートメチル剤に対する感受性菌と耐性菌の両方に対して強い抗菌力を示す。

HIDEYUKI CHIJI (Laboratory of Applied Food Chemistry, Department of Home Economics, Fuji Women's College, Sapporo, Hokkaido 001), MUTSUMI KURODA (Laboratory of Food and Nutrition, Department of Agricultural Chemistry, Hokkaido University, Sapporo, Hokkaido 001) and JIRO YAMADA (Laboratory of Food and Nutrition, Department of Home Economics, Fuji Women's College, Sapporo, Hokkaido 001). Antifungal substances in seeds of sugar beet to Cercospora beticola have been studied. Four phenolic aldehydes and four phenolic acids were isolated from fractions that exhibited antifungal activity to C. beticola. Phenolic aldehydes, especially p-hydroxybenzaldehyde, showed a strong antifungal activity to both fungi susceptible and resistant to methyl thiophanate.
