Abstract
The anthocyanin pigments of mulberry (Morus alba 'Roso') were extracted with 0.1% methanolic HCl, and partially purified by adsorption on a Dowex 50W-X4 cation-exchange column, eluted from the washed resin with acidified methanol. The pigments were separated by paper chromatography with acetic acid-conc HCl-water (15 : 3 : 82) and n-butanol-acetic acid-water (4 : 1 : 5) as solvents. The purified pigments were characterized by their Rf values, partial acid hydrolysis, identification of the aglycones and sugars after complete hydrolysis, and their spectral properties. The major pigment was identified as cyanidin-3-glucoside. The minor pigments were pelargonidin-3-glucoside and petunidin-3-rutinoside.
