韓国の伝統的な食生活は医食同源の考え方に基づき、日常の食事は主食と副食から構成されている。そのため、野菜を中心とする多様な副食から均衡のとれた栄養素を取り込むことが可能である。 そこで本稿では、韓国農村の一村落を対象として日常の食事記録をとり、日常食の特徴と基本パターンを検証する。「飯バンサン床」と呼ばれる日常の食事は固有のルールをもっており、基本飲食を除くおかずの数によって格式化されている。 しかし実際に調査してみると、調査対象村落における日常食の基本パターンは主食1に副食4の5品であった。最も質素な「三サムチョップバンサン楪飯床」の7品に比べ、当該村落は2品が少ない結果となった。また日常食の特徴としては今日でも主食と副食とが明確に区別されており、食材と調理法の重複を避けて、栄養バランスがとれるように工夫されている。したがって、韓国の村落社会における医食同源の考え方は、依然として強く受け継がれていることが確認できる。しかし近年、幼児を含む世帯を中心に外食行動も増え、肉食化の傾向がみられる。

Based on the concept of the importance of food in health, Korea's traditional food lifestyle has everyday food comprised of a staple andsupplementary foods. This enables them to obtain balanced nutritional elements from diverse supplementary foods, especially vegetables.Thus in this paper, we take daily food records in one village in rural Korea, and investigate the characteristics and basic pattern ofeveryday foods. Based on characteristic rules, everyday foods called "bansang" have their status raised by the number of side dishesapart from basic food and drink. According to our specific fieldwork survey, the basic pattern of everyday foods in the village surveyed is one staple food with four or fivesupplementary dishes. Compared to the seven dishes of a very modest "samcheob-bansang" meal, the survey showed this village hastwo dishes less. Also, a characteristic of everyday foods is that even today they are clearly divided into staple and supplementary foods,and they avoid overlapping ingredients and cooking methods, working to obtain nutritional balance. We thus confirmed that the concept ofthe importance of food in health is still a strong tradition in Korea's rural society. However, in recent years, especially households includingchildren are increasingly eating out, and we see a trend towards meat in the diet.
