Description

Reccho-seido was one of the most important documents of the Satsuma clan. (In feudal era, Kagoshima region was called Satsuma.) It is a collection of laws and regulations of the clan. It consists of 60 volumes. "Zenbu-sadame" is a chapter of "Reccho-seido vol. 32". "Zenbu" literally means meal, and "sadame" means regulation. Menus served in various special occasions are listed in "Zenbu-sadame", and the authors studied the confections and fruits which were mentioned in the menus. The confections and fruits are classified into four groups. The dates on which the foods in those menus including confections and fruits were prepared and served, and special events on the days are placed on Table 1. The name of each confections and fruits are given in Table 2. The origin and recipes of confections concerned were also studied.
