Abstract

Analyses of reducing sugars in some foods were carried out by anion-exchange resin-borate buffer system in a high performance liquid chromatograph. A postcolumn labeling reagent, 2-cyanoacetamide, was used for a sensitive and stable detection of reducing sugars. Although potassium borate buffer was used, for its high solubility, instead of sodium borate buffer in the former report, the separations and the chromatograms of the sugars were almost the same as those in the sodium borate buffer system. Successful separation of mono- and di-saccharides in market milk and some milk products was achieved by a stepwise elution of 0.2M borate, pH7.8,and 0.5M borate, pH8.7,with an analysis time of 75min a sample.
