Abstract

This study clarified the characteristics of current steps in the fruit and vegetable supply of four Korean food franchise restaurants. Supply channels from the headquarters to franchisees coexist with independent procurement for side dishes by franchisees. Fruit and vegetables are supplied by the headquarters through three channels, wholesale markets, direct purchases from producing areas, and venders for the sales strategy, with the venders forming the main channel. In addition, independent procurement by franchisees could be considered as a result of limited function of the central kitchen and regional differences in side dishes. By enforcing the supply functions of the headquarters and central kitchen, many firms tend to supply all food ingredients, including those for side dishes. Therefore, in the future, it is highly probable that Korean food franchise chains will strengthen the regime of headquarters guidance.
