Abstract

Whether the difference in blood glucose elevation was observed by ingesting low carbohydrate noodles with indigestible dextrin and normal noodles was investigated. Thirty-two male students from Kyushu Kyoritsu University baseball club were examined. At the same time, a dietary survey, body composition and blood biochemistry were performed. The results were compared with athletes' reference values. In terms of intake by nutrient, all nutrients including energy were deficient. In particular, the lack of calcium, iron, vitamins A, B1, B2, and C was remarkable. In addition, in the intake by food group, all 11 items other than cereal and meat were inadequate. Furthermore, fruits, milk and green-yellow vegetables were rarely provided in the dormitory meals. Meat was provided mostly with chicken, and fish and soy products were provided only a few times. These inadequate intakes led to a lack of nutrients required by athletes. As a result of this, the lack of nutrient intake was invited, and the bias of the food group was discovered as a problem. We hope to improve dormitory meals in the future based on this result.
