サフラワー油, 大豆油, 低エルシン酸菜種油, ラードを60℃で通気しながら酸化させ, 白ネズミに給与して以下の成績を得た.1.POVの高い酸化サフラワー油ほど白ネズミの成長を強く阻害したが, 血清コレステロール値を増減する効果は認められなかった.2.POV450meq/kgに達するまで酸化させた大豆油, 菜種油, ラードはいずれもタンパク質の消化率および体内保留率を低下させた.しかし成長阻害効果は大豆油, ラードの場合に著るしく, 菜種油では殆んどその効果が認められなかった.3.酸化油はin vivo, in vitroともにタンパク質分解酵素およびアミラーゼの両活性に影響を与えなかった.

Effects of various autoxidized edible oils on growth, protein digestibility and nitrogen retention in young male rats were investigated. The autoxidized samples from safflower oil, soybean oil, low erucic acid rapeseed oil and lard were prepared by aeration in a water bath at 60℃. The results obtained were as follows. 1) Growth rates of rats fed oxidized safflower oil at 20 1.490794e-268vel for 3 weeks declined gradually as the peroxide concentration of the oil increased. However, serum cholesterol levels of rats were not significantly altered with feeding the oxidized oil. 2) Both apparent protein digestibility and nitrogen retention of rats fed oxidized soybean oil, rapeseed oil and lard with POV of 450meq./kg were obviously reduced in comparison with those of animals on the corresponding fresh oil. 3) Activities of proteolytic and amylolytic enzymes in the intestinal contents of rats were not depressed by feeding with differently oxidized safflower oils. In vitro inhibition in an acquous solution of pancreatic trypsin and amylase by the oxidized oils were not observed.
