低温貯蔵における弱光照射および無機養分供給がアスパラガス若茎の各部位における繊維含有率および色差に及ぼす影響について調べるため, アスパラガスの若茎の貯蔵を, 6℃で21日間行った.貯蔵中の弱光照射光源として, 赤色LEDまたは白色蛍光灯を用いた.赤色LEDおよび白色蛍光灯の光合成有効光量子束密度(PPFD)は, ともに2.0μmol m^<-2> s^<-1>であった.無機養分は溶液ゲル利用により供給した.若茎の先端から5, 12, 19cmの部位の繊維含有率および色差(L, a, b)を測定した.なお, 各部位における測定値を, それぞれ頂部, 中部, 基部の値とした.貯蔵による繊維含有量の増加量および色彩(a, ⊿E ab)の変化は, 基部が最大となり, つづいて中部, 頂部の順に大であった.頂部および中部では, 繊維含有率および色彩の変化は, 弱光照射・無機養分供給条件, 弱光照射・無機養分無供給条件, 暗黒条件の順に小となった.基部では, 繊維含有率および色彩の変化は, 弱光照射・無機養分供給条件がほかの貯蔵条件にくらべ小となった.赤色LEDと白色蛍光灯とでは, アスパラガスの低温貯蔵に対する同じ効果が認められた.

To study effects of the low light intensity and mineral nutrients on changes of fiber content and chromaticity of different segments during cold storage, green asparagus spears were stored at 6℃ for 21 days under a photosynthetic photon flux density (PPFD) of 2.0μmol m^<-2> s^<-1> using red light irradiation diodes or white fluorescent lamps with mineral nutrient gel application to the spear cutends. Fiber content and chromaticity (L, a and b) were measured at the positions of 5, 12 and 19cm from the tips of the spears, which were expressed the values of apical, middle and basal segments. During cold storage, the increments of fiber content and chromaticity (a and ⊿E ab) were lowest in apical segment, followed by middle and basal segments. In apical and middle segments, the fiber content and chromaticity increased in order of light irradiation with mineral nutrients, light irradiation without mineral nutrients, and the dark conditions. In basal segment of the spear, however, the fiber content and chromaticity were lower under light irradiation with mineral nutrients than under other conditions. Red and white light had the similar effects on the changes of fiber content and chromaticity in green asparagus spears during cold storage.
