In Japan, the development-of-symptoms number of a food allergy is increasing every year, and the primacy allergen is crustacean in the adult population. For elucidating the pathogenic mechanism of crustacean allergy, we tried the identification of the allergen in black tiger shrimp.First, we fractionated the protein from black tiger shrimp by ammonium sulfate precipitation at the 30%, 50% and 80% fraction. Then we sensitized BALB/c mice by the oral administration of these fractions using cholera toxin as adjuvant. By SDS-PAGE analysis, it was identified tropomyosin in the 30% and 50% fractions and the administrations of these fractions increased the plasma total IgE levels and the shrimp tropomyosin(ST)specific IgE levels in mice. On the other hand, although it was not identified tropomyosin in the 80% fraction, the administration of this fraction increased the total IgE level more than other fractions. These results suggest that the 80% fraction includes the minor allergens except for the major allergen of crustacean allergy, tropomyosin.
