Analysis of Price Formation for Milk in China

Abstract

The milk consumption has expanded rapidly from 2000 in China. On the other hand, as for the consumer, the concern for the food safety and the quality has risen. When the quantitative expansion and the quality improvement are advanced at the same time, it is important to clarify the subject how the quality of milk influences a market price. Then, this analysis is mainly based on hedonic price function using the data obtained from market research for Chinese milk in Dalian city on October 2010. In market research, we examined about price and quality of milk. The main conclusions led from this analysis are as follows: (1) The milk containing protein is increased therefore the milk price is increased. Foreign maker and high quality are one of factor in the increase of milk price. (2) For estimated market price, it was confirmed that a foreign maker was 50 % or more expensive than the milk of average quality of domestic maker. Moreover, there was great difference between milk of average quality and milk of high quality in domestic maker. Therefore, the bipolarization of the market price is progressing rapidly.
