Abstract An enzyme catalyzing the reduction of methylglyoxal to acetol (1-hydroxy-2-propanone) in the presence of NADH was partially purified from a yeast, Hansenula mrakii IFO 0895. The enzyme was distinguished from NADPH-dependent methylglyoxal reductase (Inoue, Y. et al., J. Ferment. Bioeng., 71, 134–136, 1991) by its substrate specificity, co-factor requirement and reaction product from methylglyoxal.
