Abstract
New methods are applied to analyze physical properties of fat crystals. Two methods are introduced : (a) synchrotron radiation X-ray diffraction for clarifying dynamics of polymorphic crystallization and (b) ultrasonic velosity measurement for elucidating crystallization behavior of oil phase in oil-in-water (O/W) emulsion. Fourier-transformed infrared spectroscopy are also introduced to get fine structure of fat crystals.
