Abstract

Practical methods to analyze triacylglycerol compositions were reviewed. Reversed-phase high performance liquid chromatography (HPLC) is replacing gas chromatography for this purpose. The use of light scattering detectors has extended the flexibility of the HPLC method. Variation in response factors of the detectors are correctable. Mass spectrometry (MS) is a useful tool for compositional analysis of complex natural triacylglycerols and a combined system of HPLC and MS provides sensitive detection. Negative ion mass spectrum by atmospheric pressure chemical ionization (APCI) method are simple and useful for quantitative analysis.
