We evaluated the effectiveness of a fish-based nutritional education program for fifth-grade children in an elementary school in Kyoto conducted by a diet and nutrition teacher. We conducted 8 education sessions, focusing on fish-based nutritional education in 2009 and 2011. The 2009 group was employed as a comparison group, and in 2011, we used a workbook named The ABC's of Fish, A Holistic View for the intervention group. A self-reporting questionnaire on dietary habits, fish consumption frequency, and consciousness for fish, humans and the environment was filled out by the children at the end of the program each year. We analyzed 310 participants (comparison group, n=138, intervention group, n=172). At the end of the program, the ratio of a high consciousness for the importance of fish was 46.9% in the comparison group, but 72.0% in the intervention group (p<0.01). The ratio of a strong desire to cook fish was 43.0% in the comparison group, but 62.4% in the intervention group (p<0.01). These results suggested that fish-based nutritional education programs for elementary school children employing a workbook might be effective in promoting the interests of the relationship between fish and humans.
