The effects of NaCl and pH were investigated on the stability and physical properties of a water-kerosine emulsion prepared with soyasaponin I. Little soyasaponin I dissolved in water. The pH of the suspension was around 4, and the turbidity of the suspension disappeared around pH 7. Both the interfacial tension at the water-kerosine interface and oil separation from the water-kerosine emulsion decreased with increased NaCI content up to 0.01M. Interfacial tension became constant above 0.01M NaCI. Oil separation increased slightly with increased NaCl content up to 0.05M, and above 0.05M oil separation became constant. Water separation of the emulsion was constant with increasing NaCl up to 0.01M, and above 0.01M NaCl water separation increased. Interfacial tension was higher at pH below 4 and above 10 than at around 7. Water separation was greater at pH below 4 than at pH above 7. A pK value of about 6.5 was obtained for glucuronic acid of soyasaponin I by pH titration.
