Description

The “mutagenicity” of market milk, sterilized milk, modified milk and evaporated milk was studied by the Ames Test. No mutagenicity was observed in these samples. The concentrations of milk and milk products or the concentration of S-9 in S-9 mix had no effect on the frequency of the revertants. After heat treatment, no chemical compound was found in milk and milk products which had a mutagenic effect on Salmonella test strains.
