Three γ-glutamyl peptides-γ-L-glutamyl-L-phenylalanine, γ-L-glutamyl-L-tyrosine, γ-glutamylaspartic acid-were isolated and identified from broad bean seeds. The contents of the three γ-glutamyl peptides were very small (1_??_3mg/25kg seeds).<br> The field crops belonging to the Leguminosae were classified into three groups on the basis of contents of two γ-glutamyl dipeptides-γ-glutamylphenylalanine and γ-glutamyltyrosine-in the seeds. Group I; Crops containing large amount of the two γ-glutamyl peptides (soy bean, ladino clover, alfalfa, lupine). Group II-1; Crops containing little amount of the two γ-glutamyl peptides or free from them and containing large amount of other γ-glutamyl peptide (s) (green gram, adzuki bean, kidney bean, lima bean). Group II-2; Crops containing little amount of γ-glutamyl peptide (s) or free from them (broad bean).
