Cultural conditions were investigated in a mutant strain belonging to a Brevibacterium genus for high aspartase activity. When this strain was cultured on a medium containing fumaric acid, the intracellular aspartase formation was higher than without it. When this strain was cultured in a medium containing ethanol as a carbon source, it was found that the lower the concentration ratio of the nitrogen source to the carbon source, the higher the aspartase activity. Cells hyperproducing aspartase could be reused 10 times in L-aspartic acid production. We conclude that the use of cells hyperproducing aspartase was advantageous in industrial production of L-aspartic acid.
