Description
Many microorganisms were found to be capable of reducing dl-citronellal assymmetrically into l-form-rich citronellol, and the optical purities expressed as optical rotatory powers of which varied with the difference of the species of microorganisms. As a whole, yeasts had higher optical selectivities than other microorganisms.<br> Though the optical purities of l-citronellol obtained by microbial reduction of dl-citronellal were lower than the commercial l-citronellol, the sensory evaluation showed that both had the close similarities in odor profiles.
