It was accounted for that lowering pH and increasing acidity in the process of honey formation were caused mainly by organic acids produced enzymically.<br> Gluconic acid was the principal acid and various organic acids in Krebs cycle were also contained in honey.<br> These organic acids may be derived from fructose, glucose and sucrose in nectar by various enzymes secreted from honey bees.<br> The production of gluconic acid was the chief factor for lowering pH and increasing acidity of honey.<br> It was postulated that, in the process of honey formation, gluconic acid may be produced by the reaction of glucose in nectar with glucose oxidase secreted by honey bees, and that it may be in an equilibrium with gluconolactone in honey.
