Abstract
The physiological function of lipoprotein in fishes is not clearly defined, but it is known HDL accumulates and consumes lipid. This study examined the nutritional physiologic roles of serum lipoprotein in the accumulation and consumption of body fat in fish. First, the difference between LDL, HDL2 and HDL3 composition in cultured eel was evaluated. Each lipoprotein was separated by density gradient ultracentrifugation. In lipid and protein composition, HDL2 had relatively more CE (cholesterol ester) and lower protein than HDL3. In fatty acid composition of lipoprotein, HDL2 was different from HDL3 while it was similar to LDL.
