In order to obtain more information on the properties or the specific feature of mutton lipids, this study was undertaken to determine the fatty acid composition and triglyceride structure of mutton lipids extracted from back (M. longissimus dorsi), shoulder (M. triceps branchii) and round (M. semimenbranosus) meat of five ewes.<br> Although the lipid contents in meat did not significantly differ among three parts of carcasses, back was somewhat higher in total and neutral lipid contents than shoulder, and round was slightly less in phospholipid than the others.<br>The total lipid from back had a tendency of less C18:2 concentration and more saturated acid than that from shoulder and round. Neutral lipid of shoulder contained less C16:0 than that of back and round. The phospholipid from shoulder contained slightly less C16:0 and C18:0 and more C18:2, and accordingly contained more unsaturated acid than that from back and round.<br>In mutton lipids, C15:0, C16:0, C17:0 and C18:0, therefore saturated acids, were found to exsist in higher concentration in 1-and 3-position than 2-position of triglyceride, and on the contrary, C17:1, C18:1 and C18:2, therefore unsaturated acids, were predominantly esterified on the 2-position of glycerols.<br>The triglyceride composition of mutton lipid was as follows: SSS 9.64%, SUS 31.45%, SSU 10.77%, SUU 35.47%, USU 3.08% and UUU 10.23%. And, it was considered that the major component triglycerides of mutton lipid were 1-palmito-2, 3-diolein, 1-palmito-2-oleo-3-stearin, 1, 3-dipalmito-2-olein, 1-stearo-2, 3-diolein, triolein, 1, 3-distearo-2-olein, 1, 2-dipalmito-3-olein et cetera. The triglyceride obtained from back and round contained more dipalmito-olein and tripalmitin than that from shoulder.
