On demineralization process of skim milk solution by means of ion permselective membranes, examining the effects of linear velocity, temperature and total solid content of skim milk or the dimension of cell on the limiting current density, the following empirical equation was derived. ilim=Q•S-1/6•[1.01665)S0.1]-T•V0.1•κ•L0.D0 where-in, Q: constant, ilim: limiting current density in mA/cm2, κ: specific conductivity of skim milk in Ω/cm(_??_1/4 of initial value), S: total solid content of skim milk in % (3_??_S_??_25), T: temperature of milk in °C(10_??_T_??_40), V: linear velocity of milk in desalting cells in cm/sec, L: membrane length in the direction of flow in cm, D: channel thickness of desalting cell in cm. The value of constant Q varies dependent upon qualities of skim milk, its thermal hysteresis and demineralizing cell structure. It was observed that the Q value of heated skim milk was slightly higher than that of unheated one. The equation was in compatibility with the observation that (i/κ)lim value is lowered when either the solid concentration of skim milk of its temperature is elevated. However the initial value of ilim at the onset Qf demineraiization, which effects on the capacity of unit cell, was observed to increase with rises in the solid concentration up to 16% and then reach almost plateau between 16% and 25%, because the κ value rises in response to elevation in the solid concentration. Likewise, the κ value increases in response to elevation in temperature of skim milk. The initial value of ilim at the onset of demineralization did not vary significantly in the temperature range of 10-40°C with other conditions kept in constant. The ilim value was independent upon either the membrane length in direction of flow or the channel thickness of desalting cell.
