Experiments were carried out to isolate the genus Leuconostoc from dairy products. The genus Leuconostoc isolated from dairy products was characterized according to physiological properties. Of the Leuconostoc strains isolated, 11 strains were classified into Leuconostoc cremoris species and 34 strains were classified into Leuconostoc dextranicum species. Leuconostoc dextranicum species classified were further divided into five groups. All Leuconostoc cremoris strains isolated from Hansen's cheese starter culture and Cottage Cheese did not produce dextran and aroma compounds. Leuconostoc dextranicum strains were isolated from raw milk, pasture grass and several natural cheeses. All the Leuconostoc dextranicum strains isolated did not form acid from arabinose. Of the Leuconostoc dextranicum strains isolated, Leuconostoc dextranicum group d-1 consisting of 2 strains produce dextran from sucrose, but did not produce aroma compounds and also did not form acid from xylose. Leuconostoc dextranicum group d-2 did not produce dextran, aroma compounds and also did not form from xylose. Leuconostoc dextranicum group d-3 consisting of 10 strains produce dextran, but did not produce aroma compounds and form acid from xylose. Leuconostoc dextranicum group d-4 consisting of 10 strains did not produce dextran, but produce aroma compounds and also form acid from xylose. Leuconostoc dextranicum group d5 consisting of 11 strains did not produce dextran and aroma compounds, but form acid from xylose. Most of the strains of Leuconostoc dextranicum isolated from dairy products did not produce dextran from sucrose. The classification of the genus Leuconostoc depend strongly on the properties of dextran production, production of aroma compounds and production of acid from arabinose and xylose. The classification of the genus Leuconostoc has been discussed.
