Genetical differences of carcass tissue production abilities of steers were investigated using 3 strains of pure Japanese Black of 55 head, 16 head of Holstein, 28 head of Japanese Shorthorn and 54 head of crosses which consist of 3/4 Japanese Black and 1/4 Holstein, and three way crosses which were 1/4 Japanese Black, 1/4 Holstein and 1/2 Japanese Brown or 1/2 Charolais. All steers were serially slaughtered and their side carcasses were dissected. Differences of relative growth coefficients of muscle, fat, and bone weights to side carcass weight were significant among breeds and crosses. Relative growth coefficients of muscle weight to bone weight did not differ among breeds and crosses. The differences of least squares mean weights of muscle among them were significant at overall mean bone weight, and the muscle production ability of Holstein, Japanese Shorthorn and one of 3/4 Japanese Black crosses were inferior to the other breeds and crosses. Japanese Black and their crosses generally showed high potentiality for muscle production. It was found that the relative growth of fat weight to muscle+bone weight differed among breeds and crosses. Japanese Shorthorn was characterized by high potential in this trait.
