Inhibition or induction of cytochrome P450 (CYP), which is responsible for the metabolism of drugs, can often cause interactions between foods and drugs. Therefore, concomitant intake of the food containing CYP-inhibitors or-inducers and certain drug may produce unexpected results. In this study, we systematically investigated the inhibitory effects of 30 natural food additives on CYP3A4 and CYP2C9 activities. Turmeric oleoresin and Kaoliang color exhibited relatively higher inhibition of CYP3A4 and CYP2C9 activities. Palm oil carotene and Marigold color inhibited particularly CYP3A4 and Tamarind and Monascus colors inhibited CYP2C9 activity. CYP inhibition assay-guided fractionation of Kaoliang color furnished flavonoid apigenin and high-molecular weight proanthocyanidin fraction having potent inhibitory activities to CYP3A4 and CYP2C9.
