The effects of allyl isothiocyanate on digestion and absorption of sugar were studied in conscious rats. Male Sprague-Dawley rats underwent both portal vein catheterization and gastrostomy, and received either a continuous intragastric infusion (11.25mL/kg/hr) of 15% sucrose solution or 15% maltose solution. After the administration of allyl isothiocyanate (0.05g/kg), capsaicin (0.05g/kg), cinnamic aldehyde (0.24g/kg) or anethole (0.24g/kg), the portal plasma glucose levels were determined. The elevation of plasma glucose was significantly greater in rats receiving allyl isothiocyanate than in rats receiving other spice ingredients. These results suggest that allyl isothiocyanate elevated the portal plasma glucose in rats received a continuous intragastric infusion of sucrose or maltose.
