Analyzing concept maps drawn by junior high school students, this study examined effects of food lessons that focus on regional dietary culture. The survey was conducted during the period of March through July 2005 and involved two groups. Group 1 was a group of junior high school students who took lessons on dietary culture taught by teachers who are members of the Kumamoto Prefecture Home Economics Circle. Group 2 was a group of students in the Kanto and Kumamoto regions who also took lessons on the subject but were taught by teachers who were not members of the Circle. As a result of this survey, the followings were found: 1. Awareness levels regarding food and dietary culture of Group 1 were the same as those of Group 2 regarding issues of nutrition and health, preparation and consumption, and food safety. However, Group 1 had a higher level of understanding regarding the relationship between food and the local region and its environment. 2. It was also found that Group 1's understanding was based on a broader foundation of knowledge and a realization of the interdependency among the key concept words regarding nutrition and health, preparation and consumption, the relationship between food and the local region and environment, and food safety. 3. Group 1 regarded the study of food to be of direct concern to themselves and life in their local region, through which they became aware of a variety of challenges relating to local living. This resulted in their drawing concept maps expressing their attempts to offer solutions to the challenges. From these findings, the author suggests that Group 1 students are developing a conscious intent to lead their own lives guided by their own thinking and judgment on these issues.
