Description
The purpose of this study is to develop elementary school students' ability to choose balanced food for both of their mind and body independently and to manage their dietary life. The effectiveness of the food education program that uses full-size dish model cards on food purchasing behavior including choosing and purchasing independently was examined. Three hundred and seventy-four elementary school children were surveyed during the period of November 2003 through February 2005. A significant increase was noted in the number of children who favorably evaluated food selection; 25.8% "before" to 67.0% "after" learning the program (p≦0.001). Calories per one meal were within the adequate range. 78.5% children reported enjoying the implementation of the program. As for the children's intention to recommend the program to their families, an evidence of establishment of their learning, whom 80% or more of them replied affirmatively. Our study confirmed that the implementation of the program for choosing "Nakashoku" and Eating Out with an emphasis on elementary school children's food purchasing behavior enhanced their learning of food selection behavior. Furthermore, a favorable change was noted in both food and consumer behavior among elementary school students because of their information search and the improvement over evaluation of their own selections.
