Abstract

Domestic food service industry has almost 24 trillion yen market. Few academia has paid attention to study this industry because its relatively low barrier to entry hide real problems. Chain restaurant, however, has been in difficult business situation and may reach a critical turning point. In this paper, the authors would like to propose a fundamental framework to study on service management in the food service industry based on a value chain concept.
