Abstract

On the basis of National Nutrition Survey in Osaka Prefecuture, an intake of vitamin E and polyunsaturated fatty acids were calculated according to the fat soluble nutrients from the Fat-Soluble-Nutrient Composition Table in Japan. 1. Vitamin E intake per capita per day was 8.3 mg alpha-tocopherol equivalent. 2. Intake of total fat, saturated fatty acid, mono-unsaturated fatty acid and poly-unsaturated fatty acid was 59.8 g, 17.0 g, 20.9 g and 15.1 g, respectively. 3. Ratio of vitamin E to poly-unsaturated fatty acid (E/PUFA) was 0.55, while it was 0.39, as PUFA was calculated as linolate on the bases of their peroxidizability.
