Abstract

This research intends to improve quality control in marine products distribution, focusing on auctioneers' appearance evaluation of fresh fish done, by disigning a model equivalent to this method. A total of 269 sample fish of White chestnut (Lagocephalus wheeleri) were graded into 5 classes by experienced auctioneers. By analyzing the results of auctioneers' appearance evaluation of fish and the relationship between color of fish skin and freshness of fish meat, it was found that 4 color indexes set on the surface of fish bodies reflected well the appearance evaluation and the degree of freshness of fish meat. The fuzzy inference model constructed from these indexes, as antecedent- paart variables, was evaluated. The model showed that results of auctioneers' appearance evaluation and those inferred from the model had an agreement of more than 96%. Therefore, the model was shown to be highly useful.
