Volatile sulfur compounds in saké were driven into p-chloromercuribonzoate solution by a flow of nitrogen gas, and determined by the increase in absorbancy at 250 mμ. Conditions to drive out volatilesulfur compounds from saké were examined and fixed as described below. Concentrated sulfuric acid was added to the sample in a lask to lower the pH to 1.6. The flask was then immersed into the water bath at 60°, and nitrogen gas was introduced into the sample at a rate of 150 ml per minute for 2 hours, the vapor evolved being caught by an ice-cooled p-chloromercuribenzoate trap. Recovery of hydrogen sulfide and ethylmercaptan added to saké was 96.7 % 98.7 %, respectively. Therefore, the method seemed to be applicable to the determination of volatile SH compounds in saké.<BR>On applying this method to the saké exposed to sunlight, it was found that volatile sulfur compounds were increased by sunlight, and that the reproducibility of the increase was high with the samecondition of exposure.
