Description

Contents of vitamin D2 in Shiitake, Hiratake and Enokitake irradiated by sun light or ultraviolet light under various conditions, and changes in the contents during storage after irradiation were investigated. Since significant amounts of vitamin D2 in Enokitake was increased by ultraviolet irradiation, the suitable conditions for ultraviolet irradiation, cooking and food processing of Enokitake were investigated to provide a dietary source of vitamin D2. The results suggested that few amounts of vitamin D2produced in irradiated dried fungi were destroyed during storage for several months and therefore these fungi can be available for an effective dietary source of vitamin D2.
