This paper was aimed to investigate efficient extraction methods and properties of hypotensive compounds from wheat beni-koji fermented by Monascus pilosus. Beni-kojis were treated by 3 kinds of extraction methods. One was an extraction with ethanol followed by fractionations, removal of fat-soluble fraction with ethyl acetate and n-butanol, and water extraction, sequentially. Another was a direct extraction with hot water. The other was an extraction with hot water after immersion in acetone. The extracts obtained by these methods were fed to spottaneously hypertensive rats (SHR) for 15 days. The all extracts as well as wheat beni-koji reduced the blood pressure of SHR. Products of Monascus pilosus cultured in liquid medium also had hypotensive activity. The results of this feeding experiment indicated that hypotensive compounds were perfectly extracted from wheat beni-koji with hot water, and, these compounds of wheat beni-koji as well as ones of rice beni-koji were soluble in water and ethano1, but insoluble in n-butanol and ethyl acetate.
