To learn the seasonal variations of nutrient intake, we compared the intake in four seasons as assessed by 24 hour recall method in 143 subjects (63 males; 80 females) aged 35 years or over in a rural city in Japan. We calculated mean nutrient intakes in each season (spring, summer, fall and winter) and mean coefficients of variations (CVs) of each nutrient intake across the four seasons. The mean values of water, vegetable protein, vegetable fat, potassium, vitamin C, vitamin E, salt, linoleic acid, poly-unsaturated fatty acid, mono-unsaturated fatty acids and dietary fiber showed significant seasonal differences in males and females, indicating higher levels in spring and summer. The mean CVs of seafood fat, vitamin A, vitamin D and cholesterol in males and females and animal fat in males were 50 percent or greater. These findings suggest that the seasonal variations should be considered in assessing nutrient intakes in Japan.
