The nutritive values of proteins ingested by Japanese people were tested by animal experiments.<br>1) The biological value (BV) of Japanese diet which contains about 40% of animal protein (diet A) was 86. But in the case of vegetable diet (diet B) the BV was only 71. And the nutritive values of these diets were markedly improved by adding of small amount of methionine to the diet A and of lysine and threonine to the diet B.<br>2) The BV of white rice, pressed barley, wheat flour and buckwheat flour were 71, 76, 51 and 74, respectively. In the case of mixing of rice and barley (8:2) and of wheat flour and buckwheat flour (5:5), the BV were 72 and 71, respectively.<br>3) The BV of fishes are as follows: Cod 89, flatfish 84, jack mackerel 89, salmon 81, sardine 79, squid 75, tuna (lean meat) 83, yellowtail 86, and shrimp 87.
