Previous epidemiological studies have suggested a significant relation between hypertension and the amount of salt intake. In Japan, salt is the most prevalent seasoning. And especially the aged people may be considered to be used to consume a lot of salt due to taking long-accustomed salty dishes according to traditional food habits. For that reason the author tried a comparative study on taste for salt and salt intake among aged people living in the Homes for the aged of two districts: Tokyo Metropolitan (urban) and Nagano Prefecture (rural).
The findings obtained are as follows:
1) Most favorable taste for NaCl concentration in the solution was 1.2% in Tokyo, while in Nagano 1.5%.
2) Daily NaCl excretion in urine amounted to 6.5g in Tokyo, while in Nagano 8.4g.
3) Daily potassium excretion in urine was 0.8g in Tokyo, but 1.2g in Nagano.
4) There was no significant correlation among taste for salt in the NaCl solution, the level of blood pressure, the excreted amount of sodium in urine and potassium.
