Objective: The first objective is to grasp the dietary habits of evening part-time high school students, and the second is to evaluate the process of nutrition education.<br>Methods: We targeted 179 students at an evening part-time high school in Saitama prefecture. Of them, 133 students, who were provided with school lunch, were subject to nutrition education. We conducted a self-report survey in September 2014 and conducted nutrition education lessons once a week for ten weeks during the school’s lunchtime. The items were subjective health, dietary satisfaction, food intake, trans-theoretical model, outcome expectations and self-efficacy, diet-related information, dietary environment, food frequency, and time. After these sessions, we conducted the self-report survey again, adding items related to process evaluation. The number of valid responses was 76 and 44, respectively.<br>Results: Regarding their subjective health, 79.7% of subjects answered that they were “healthy,” but 24.0% of them responded with “sometimes skipping meals.” In addition, except for school lunch, those eating alone made up the highest proportion in any meal opportunity. Through the process evaluation, it was found that 81.4% of participants favorably responded to the theme, and 72.1% responded favorably to the attempted nutrition education at meal times.<br>Conclusion: We revealed the dietary habits of evening part-time high school students, which indicates the necessity of nutrition education. The program’s theme, content, and execution time were evaluated to a certain extent. Future research is required to construct a more suitable nutrition education program.
