説明
The structure and properties of collagen are described comparing with those of gelatin. The properties of collagen such as viscosity, holding of moisture, and resistance to the degradation by proteases, are quite different from those of gelatin, though collagen shows the same amino acid composition as gelatin. The reason for the difference in their properties would be due to the difference in their structures. Collagen has a triple-helical structure, while gelatin shows a random coil conformation. The characteristic properties of collagen would be caused by the unique structure.
