Abstract
<p>In the vacuum freeze drying process, four technologies are important : freezing, drying, antioxidant treatment and packaging, the first two of which constitute its core technologies. Freezing concerns its rate and temperature, while drying necessitates attention to cold trap temperature and vacuum degree.</p>
