Abstract

The effect of alternating current high electric field (AC-HEF) on the quality of satsuma and Wase Satsuma mandarin (Citrus unshiu Marc. and Citrus unshiu Marc. var. praecox Tanaka) fruits were investigated. The samples were packed in polyethylene bags (0.02 mm) and exposed to AC-HEF (105kV/m, lhr). The weight loss of the fruits, the pH and°Brix of the flesh, the Hunter color value, and the chlorophyll and flavonoid contents of the peels were monitored during the storage of fruits in the dark at 25°C after treatment. The treatment of AC-HEF on Wase satsuma mandarin fruits inhibited the degradation of the chlorophyll and flavonoid of the peels. The delayed effect of AC-HEF on the chlorophyll degradation of the satsuma mandarin was found. However, the content of flavonoid in the peels did not show remarkable differences as compared to that of the control. The pH and°Brix of AC-HEF-treated flesh of both varieties of mandarin fruits were similar to that of the control during storage.
