Abstract

The purpose of this study is to analyze the relationship between consumers' latent knowledge of food safety and their latent attitude toward beef consumption, using covariance structure analysis. We estimated a multi indicator model. A test of overall model fit using the Bollen-Stine bootstrap procedure showed that the fitted model is valid and nonparametric bootstrap procedure showed that biases of maximum likelihood estimates are reasonably small despite of non-normality of data, in this particular case. The main findings of our analysis are as follows.<br>(1) Having a great deal of knowledge regarding the potential dangers of BSE, including incorrect knowledge, leads to the adoption of either one of two extreme attitudes-a blind belief in the safety of domestic foods or excess caution regarding food safety.<br>(2) Having a great deal of knowledge regarding the potential dangers associated with foods weakens the blind belief in the safety of domestic foods, weakens the tendency to conform to the food safety measures adopted by others, and decreases confidence in the information on food safety provided by the mass media.<br>(3) Having a great deal of knowledge regarding the action taken by the Japanese government against BSE strengthens the blind belief in the safety of domestic foods and strengthens the tendency to follow others.<br>Thus, we see that consumers who gather a great deal of information regarding food safety do not blindly believe in the safety of domestic foods. Meanwhile, knowledge of the actions taken by the Japanese government against BSE contributes to restoring consumers' reliance on domestic foods.<br>However, in order to curb consumers' overreaction to the risks of foods and to ensure that they think about the kinds of action the government should take, it is necessary for the authorities to replace the incorrect information available to the public with accurate information on the risks associated with foods.
