抄録

Chlorophyllase activities were found to be high in tea and goosefoot leaves and low in leaves of 10 other plants. The color of the fresh leaves changed from green to bright green during blanching. Chlorohyllide was not detected in these leaves after blanching, and chlorophyllase seemed to be not operated during blanching.<br> When the fresh leaves were dipped in hot water (60_??_70°C) for 5_??_6min, a large amount of chlorohyllide was produced, especially with goosefoot leaves, but a color change was not observed. It thus appears that the change in color of fresh leaves on blanching can not be ascribed to chlorophyllase activity. Chlorophyllide was unstable in the acetone homogenate of fresh leaves, and purified chlorophyllide was more labile than chlorophyll upon heat treatment.
