Description

The molecular species of the fatty acid in the fat of wheat seeds were C50, C52 and C54, based on carbon number. The main groups were C52 and C54 types. The main molecular species were 16:0-18:2-18:1 type in triene, 16:0-18:2-18:2 type in tetraene, 18:2-18:3-18:2 type in heptaene and 18:1-18:2-18:2 type in pentaene. Wheat seeds contained nine kinds of phos-pholipids. Phosphatidylethanolamine, phosphatidylcholine, N-acylphosphatidylethanolamine and phosphatidylinositol were the principal types. The main molecular species of phospholipids in wheat seeds were 18:2-18:2 and 16:0-18:2 types in phosphatidylethanolamine, 16:0-18:2 and 18:2-18:2 types in phosphatidylcholine and phosphatidylinositol and 16:0-18:2-N-18:2 and 18:2-18:2-N-18:2 tvnes in N-acvlphosphatidvlethanolamine.
